Green Everything Sauce

I'm a big fan of sauce. I feel like having a delicious, creamy sauce in the fridge that packs a lot of flavor with a splash of color gets me excited about creating meals to go with it. This green sauce is one of my go-tos, and is really more of a guideline than a recipe. Whenever I have veggies that need to be used up, they go into the blender along with a few other key ingredients, becoming my new topping of the week. To balance the strong pungency of many herbs in this recipe, I love adding mint, which lightens up the flavor while offering an assist to the digestive system. The essential oils found in mint act as a carminative, helping to dispel gas and bloating while keeping the stomach feeling settled. When I happen to eat a heavy meal that doesn't contain mint, though, I love to sip on a post-meal cup of mint tea  to enjoy the same benefits!

Ingredients:

  • 1 shallot
  • 4 cloves garlic
  • jalapeño
  • 1 1/2 cup parsley
  • 1 cup mint
  • 1 cup scallions
  • juice of 1 lemon
  • 1 avocado
  • 3 tbsp olive oil
  • 2 tbsp water
  • salt and pepper to taste.


Roughly chop all ingredients. Add everything to food processor or blender, and process until it becomes the consistency of a thick sauce. Add water as needed to create ideal consistency, and add salt and pepper to taste.

Experiment by adding different combinations of green herbs, including nuts, nutritional yeast, or anything on hand. This is a great way to use up odds and ends of things you have kicking around. Use this sauce as a salsa, salad dressing, taco sauce, or as a topping for chicken or eggs. I've personally been enjoying my latest batch on top of delicious chicken tacos!
